WITH VEGAN MOCHA CREAM
AND HAZELNUTS


Spiced Christmas pears with vegan mocha cream and hazelnuts
Ingredients
Spiced pears:
- 4 pears
- 1 cinnamon stick
- 1 star anise pod
- 2 clove pods
- 1 cardamom pod
- 1 teasp powdered ginger and turmeric
- 1 orange peel
- pinch of sea salt
Mocha vegan Cream:
- 8 - 10 tbsp brown rice amazake (1/2 jar)
- 4 tbsp grain coffee (I use Yannoh) to taste
- 1 teasp vanilla extract
- 3 tbsp maple syrup
- ½ teasp tamari or a pinch of sea salt
Toppings:
- Toasted hazelnuts
- Cinnamon or cocoa powder
Instructions
- Peel the pears, put them in a pan covered with water (1 or 2 cm high), add the spices, orange peel and a pinch of sea salt. Cover and bring to a boil.
- Meanwhile, prepare the cream by gradually adding the grain coffee powder to the amazake, and mix well. Add the vanilla, maple syrup, shoyu or salt and mix again.
- Pour the sauce over cooked pears. Serve with toasted hazelnuts and cinnamon or cocoa powder.
